VSOC White Label

VSOC Black Label

The flavour of our VSOC Black Label cheese is nothing short of unique. It has all the colour, taste and aroma you expect from a classic vintage Gouda, but an extra hint of sweetness and the subtle crunch of salt crystals make it exceptionally robust and irresistible.

 

VSOC Red Label

Meet our V.S.O.C. red label: a naturally 10-month matured cheese with Italian characteristics. We made sure to combine the best of two worlds: the nutty and fine-aged flavour profile of Italian cheeses with the smooth texture and flavour of an aged Gouda cheese, which makes it easier to slice, melt or shred. This cheese is unique in his kind die to his low fat percentage and therefore delicious on sandwich, ideal in the kitchen to bring some Italian flavour to your dishes and remarkably good with the glass of Cabernet Sauvignon or Pinot Noir.

 

VSOC Gold Label

It is not without reason we named our cheese Very Superior Old Cheese. The world’s most prestigious competition: ‘The World Cheese Awards’ have praised them for their Very Superior taste! No other price would have fit our V.S.O.C. Gold label better than the World Cheese’s Gold Award. We leave our Gouda cheeses longer on the wooden shelves to ripen. The extra care and time our cheese gets result is a beautiful crumbly texture, a deep yellow/orange colour and a fine structure of even more salt crystals. Although naturally matured for at least 2 years, this cheese retains a nice creamy mouthfeel and an excellent taste with hints of roasted nuts and caramel.

 

VSOC Platinum Label

After winning a Gold award for our V.S.O.C. Gold label, we wondered what would happen when we keep our cheese on the shelves for more years? The result, a cheese with an even stronger taste profile for those who love deep sweet notes of butterscotch. Since the cheese dries out more, you get a very crumbly and flaky cheese full of salt crystals. Because of the necessary time and care this masterpiece takes, you do not find a cheese like this around much. Meet our V.S.O.C. Platinum, a rare cheese which you will find worth the wait.

VSOC White Label

Melts in your mouth

For the perfect complement to our special Black Label cheese, look no further than VSOC White Label: a remarkably tasty vintage goat’s cheese that melts in your mouth. Another superb example of Dutch master craftsmanship in cheesemaking.

 

Matured to perfection

VSOC White Label owes its delicious and distinctive flavour to its unique ripening process. Like the Black Label, it is matured on wood for at least a year. The wood draws out excess moisture so that the cheese ripens beautifully. Throughout this time, it is regularly hand-waxed and turned to keep its shape and to ensure that the salt is distributed evenly. Only then does it earn the VSOC quality la-bel.

VSOC Black Label

Remarkably robust flavour

The flavour of our VSOC Black Label cheese is nothing short of unique. It has all the colour, taste and aroma you expect from a classic vintage Gouda, but an extra hint of sweetness and the subtle crunch of salt crystals make it exceptionally robust and irresistible.

 

The best of Dutch craftsmanship

VSOC Black Label is made to the original Gouda recipe in Holland, using only the best Dutch milk. To make a full wheel, we use no less than 110 litres of milk. After the traditional production process, the cheese is matured on wood in our special ageing room for no less than a year. Throughout this time, it is regularly hand-waxed and turned until it reaches VSOC quality standard. The result is a fine example of Dutch craftsmanship, following a tradition handed down from father to son over many generations.
